Beth Alpaugh
CEO/Owner
Beth Alpaugh, CEO and Owner, is a natural entrepreneur whose strong work ethic led her to open a small coffeehouse in December 2002, which has since grown into one of the largest and most requested catering companies in Idaho. In 2013, at the request of clients, she expanded the business to include a wholesale division focused on fresh, locally made grab-and-go foods, and due to continued growth and demand, the company recently moved into a brand-new, state-of-the-art commercial kitchen and processing facility and launched the Simple Bites brand for its wholesale products.
Michael Alpaugh
CEO/Owner
Michael Alpaugh, Chief Financial Officer and husband of Beth for 38 years, is also a proud veteran of the United States Air Force, having retired in 2007 after 22 years of service. In his retirement, Michael supports every endeavor Beth pursues while also being a devoted father to their two children: their daughter, Taylor, who serves as the Director of Communications for Simple Bites and is a Boise State University graduate, and their son, Nick, who graduated from Boise State University in May of 2025 and now works as a Business Development Executive for Micro Tech in Boise.
Ellen Thomason
General Manager
​Ellen Thomason, General Manager, brings a lifetime of food and management experience to Simple Bites. She spent 17 years with McDonald’s Corporation as the Public Relations Manager for a local owner of three McDonald’s locations, followed by 19 years with Rhodes International as a plant secretary for the bakery line in Caldwell, Idaho. Although she initially planned to retire, Ellen chose instead to support her daughter’s entrepreneurial dreams and officially joined our team permanently in 2013, where she continues to be an invaluable leader within the company.
Jimmy Kerner
Production Manager
Jimmy Kerner, Production Manager, has been part of the Simple Bites team since 2015. After graduating from high school in Weiser, Idaho, Jimmy moved to join our team, bringing with him a strong passion for cooking and a willingness to help wherever needed, especially as we took on numerous catering events. Over the years, his dedication and leadership helped him grow within the company, and in August 2021 he stepped into the role of Production Manager. Today, Jimmy oversees the production floor, directs our team, manages inventory ordering, and ensures all USDA paperwork and requirements are properly maintained. Having joined us straight out of high school, Jimmy has since married his wife, Amanda, and started a family, growing right alongside the company.
Taylor Alpaugh
Director of Communications
Taylor Alpaugh, Director of Communications, has quite literally grown up alongside the company. She was just seven years old when her mom, Beth, decided to start her own business, and Taylor has been involved in nearly every aspect ever since. She graduated from Boise State University in 2018 with a bachelor’s degree in Communication and Business. After deciding not to pursue law school, Taylor planned to help grow Simple Bites for just one year—but eight years later, she has taken on an expanded leadership role. Today, she manages our social media presence, oversees client relationships, and runs the front office, playing a key role in the continued growth and success of Simple Bites.
Amanda Contreras
Office Assistant
Amanda Contreras, Office Assistant, has been a valued member of the Simple Bites Meals team since August 2024 and serves as our office assistant. She is often the first friendly voice you hear when you call and a welcoming presence for customers who stop by our facility. Amanda assists clients as needed and plays a key behind-the-scenes role by ensuring all product labels are accurately printed for every item that leaves our kitchen. A hardworking mom of two girls, she brings dedication, organization, and care to everything she does. Her prior experience working in home care and supporting seniors is reflected in her compassion, patience, and commitment to excellent service, making her an important part of our team.
